'Flipping Good' Skinny Pancakes.

As pancake day is this Tuesday I thought it would be fitting to start this blog with a simple pancake recipe; which just happens to be a great alternative if you are gluten or lactose intolerant, as it only requires two ingredients egg and banana.

You will need two medium eggs and one medium ripe banana (the riper the better). This will make one serving of two medium sized pancakes.

To start peel and mash the banana in a jug with a fork if the banana is not very ripe put it chopped up in a jug and put it in the microwave for around 30 seconds, 

Then add in the two eggs and mix until the consistency is something like this...

Heat the pan with some oil in it, in this case I have used a few sprays of fry light.

Then pour half the mix into the pan, wait until the edges of the pancake cook and the top has solidified slightly, just enough so you are able to flip the pancake.

Then flip! Cook on the other side for about 30 seconds and put it on a plate. Repeat with the other half of the mix and there you have it.

Two pancakes with around 210 calories, plenty of protein (13g) and one of your five a day!

Serving ideas I am partial to;
A squirt of sweet freedom,
Peanut butter,
Chocolate chips,
Chopped toasted nuts,
Frozen berry compote.

Or mix and match: chocolate chips and peanut butter on a banana pancake, pretty. darn. tasty.

Perfect for pancake day or an easy weekend breakfast.
