To start peel and mash the banana in a jug with a fork if the banana is not very ripe put it chopped up in a jug and put it in the microwave for around 30 seconds,
Heat the pan with some oil in it, in this case I have used a few sprays of fry light.
Then pour half the mix into the pan, wait until the edges of the pancake cook and the top has solidified slightly, just enough so you are able to flip the pancake.
Two pancakes with around 210 calories, plenty of protein (13g) and one of your five a day!
Serving ideas I am partial to;
A squirt of sweet freedom,
Chopped toasted nuts,
Frozen berry compote.
Or mix and match: chocolate chips and peanut butter on a banana pancake, pretty. darn. tasty.
