Baked Avocado with Egg and Bacon.

For lunch the other day, I thought I would try something new that I had seen on the internet. 

For this to feed one you will need: 
Half an avocado with the stone removed. 
One small egg. 
Two slices of bacon chopped up. I personally remove the fat from around the bacon. 

Pre heat the oven to 240. Chop up the bacon and fry it until crispy. Crack the egg into the middle of the avocado and sprinkle the bacon bits on top. Make sure the avocado is in a dish that keep it in place so the egg doesn't run out too much. I used a loaf tin. 

Place in the oven for about 10 minutes. 

 Serve with toast, ryvita or as I have done crisp breads.
