Filled sweet potato.

This was dinner tonight, baked sweet potato filled with roasted veg and goat's cheese. 

To make one portion/ potato you will need: 
1 sweet potato,
oil, I am using fry light,
good pinch of salt,
some Mediterranean vegetables. I am using a frozen mix as it is cheap and easy! 

I recommend lining the dish you are going to cook the veg in as it can really stick and make a mess of an oven dish. Lining it with some scrunched up baking paper is quick and minimizes clear up.

Pour 2 good handfuls of the vegetables into the dish and cook in the oven for 10 mins at 200. 

While the veg is in the oven, clean the potato and stab it with a knife all over. Put in the microwave for 5 minutes. 

once out of the microwave place on an oven dish, again I have covered it in baking paper to minimize clear up. 
Spray or rub in the oil all over the potato, then sprinkle salt on top. Leave in the oven for 10 mins still at 200. 

Take the potato and the vegetables out of the oven.

Slice the potato and pile the vegetables on top of the potato. 

Crumble some cheese on top again I used goat's cheese but any would work I guess.  Put it back in the oven for 5 minutes. 

Then it is ready to eat. Pretty healthy when you think about it, only a naughty bit of cheese at the end. 

You could add chicken to bulk it out a bit or an after thought I had was to next time add paprika or jalapenos on top.
