Roasting Garlic.

This post is a part one to how to make sweet potato bean burgers, recipe here. As the recipe requires two bulbs of roasted garlic I thought I would start by letting you know how to roast the garlic as this really mellows the flavour.

For each garlic bulb, I did two, you will need:
one bulb of garlic.
a drizzle of olive oil, around a tablespoon.
a sprinkle of salt and pepper.
a square of foil.

First peel the top part of the garlic to reveal the purple skin.

Then slice the top part of the garlic off, just so you can see the top part of the cloves.

Place each bulb on a piece of foil. Curl up the edges so the oil and seasoning won't spill off the foil.

Drizzle the oil on the bulb and add a sprinkle of salt and pepper.

Scrunch up the foil to seal in the garlic into a little parcel. Place on a tray in the centre of the oven at 200 for around half an hour.

They will come out of the oven all brown on top and you should be able to easily squeeze them out of their peel. (Is it called peel??).

And that is that, put it on bread for a poshed up mellowed out garlic bread, add it to soup, add it to mayo, add it to natural yog to make a dip. The list goes on OR use it to make sweet potato bean burgers. yum.
