Oreo Cheesecake Cake.

This cake is ridiculous three packs of oreos, white chocolate, chocolate sponge, icing sugar, butter, philly and more butter. It makes for a sinful cake.

I started off making a sponge cake I made a packet mix of betty's devil's food cake. Its perfect for this kind of cake so I didn't see the point in making the sponge from scratch since I wanted it to taste like devil's food cake anyway. I left the two sponges to cool and started to make the cheesecake filling.

To make the filling you will need:
1 packet of salted butter. 250g.
1 tub of full fat philly.
200g of icing sugar.

Mix the icing sugar, butter and philly, until smooth.

Break up the oreos and add to the cheesecake mix. Stir them in.

Spoon the mix onto the sponge, all of it so it is nice and thick but evenly coated.

Put the other sponge on top and put in the fridge for half an hour.

Next for the icing. Crush a packet and a bit of oreos (The left overs are used to go round the top of the cake). I used a pestle to crush mine but if you have a blender put them in there and blitz them.

Melt the two packets of white chocolate using a baine-marie (over a pan of simmering water, don't let the bowl touch the water). leave this to cool slightly so that it will not curdle the butter in the icing.

Add the vanilla extract to the oreos.

Add a packet of softened butter 250g and icing sugar 200g.

Mix with the back of a spoon and gradually add the white chocolate.

Finish off by giving it a quick whip with the mixer.

Spread all over the cake with a spatula.

Add the left over oreos to the top of the cake.

Keep it in the fridge. Until it is gone, which won't be long.

It's amazing, you know it looks it...
