Banana Bread.

This bank holiday weekend I made banana bread which is really simple to make and perfect for using up over ripe bananas.

To make one loaf you will need:
285g Plain Flour.
Pinch of Salt.
1 teaspoon Bicarbonate of Soda.
110g soft Butter.
225g Caster Sugar.
2 Eggs.
4 Bananas.
85ml Milk.
1 teaspoon Lemon Juice.
1 teaspoon Vanilla Extract. 

Grease your loaf tin and pre heat the oven to 180.

In one bowl put the flour, bicarb and salt. In the next cream the butter and sugar. In the last and largest bowl mash the bananas and then add in the eggs, milk, lemon juice and vanilla. 

Add the creamed butter and sugar to the large bowl until it is all mixed. Then fold in the flour mix gradually. Until the mix looks like below. 

Pour the batter into the loaf tin and place in the centre of the oven for one hour. 

Take out of the oven and leave to cool in the tin until warm, then remove from the tin to cool fully. 

Slice and enjoy with a hot drink.
