Blue Cheese Guacamole.

I saw the idea of a blue cheese guacamole online. I think it was originally a Nigella recipe but I'm not sure. I didn't use a recipe for mine but just added bits until it was the texture and taste I wanted.

I ended up using:
2 Avocados,
40g Blue Wensleydale Cheese,
10 Cherry Tomatoes,
2 teaspoons Lemon Juice.


I mashed the avocado with a fork and chopped the tomatoes into quarters. Mixed them in and added the lemon juice.  


I then crumbled the blue cheese into the mix and stirred it in.  



A really simple dip for crisps or veggie sticks or it would be nice on top of a burger!
